CAPERS

Native to Morocco, our capers vary in size from 0.5-1.5 cm in length, are green with frequent reddish hues, and are spherical in shape, slightly pointed at the tip opposite the stem. They have a strong, penetrating flavor.

The caper is the unopened bud of the plant and is harvested shortly before flowering, between late May and late August.

The very small ones, similar in size to caviar, are more prized and well-suited for garnishing. The larger ones are more tender and can be minced to enhance sauces and fillings.
