SLICED EGGPLANT
Preserved in oil, they are prepared following the traditional Sicilian recipe known as "a crudo," whereby the eggplants are sliced and left to rest in layers with salt, which "cooks" them, preserving their distinctive flavor and crunchiness.
Prepared in this way, they are immersed in oil flavored with a blend of aromatic local spices, including a pinch of garlic.
