CAPERS
in length. They are green with frequent reddish hues, spherical in shape, slightly pointed at the tip opposite the stalk, and they have a strong
and penetrating flavor.
The caper is the unopened bud of the plant and is harvested shortly before flowering, between the end of May and the end of August.
The very small ones, similar in size to caviar, are the most valuable and are well-suited for decoration. The larger ones are more tender and can be chopped to enhance sauces and fillings.
