"GAETA" BLACK OLIVES

The production area is limited to the province of Latina. The "Itrana" olive cultivar is perfectly suited for both table consumption and oil production.

The olives are harvested between March and April when they are fully ripe and have a bright purplish-black color. Repeated immersion in brines of varying strengths gives these olives their unmistakable, tantalizing, and slightly vinegary flavor.

Famous since the 1400s thanks to the export of Gaeta oil throughout the Mediterranean, it was even described by Virgil in his poem Aeneid.
