SIMPLY DRIED DRIED TOMATOES
According to traditional preparation, tomatoes are picked when ripe, cleaned, cut in half, and left to dry in the sun on a wooden rack, after being sprinkled with salt. Drying typically lasts a week, after which the completely dehydrated tomatoes are rinsed and blanched in a water and vinegar solution to sterilize them.
The dehydration process removes water, but allows the tomatoes to be preserved for a long time without losing their flavor, actually enhancing it even more.
